Sweet & Spicy Soba Noodles

Gluten-free noodles sauteéd with assorted vegetables, and tossed in a special sauce that’s the perfect combination of sweet and spicy. Vegetarian, delicious, and on your table in 15 minutes.
½ a package of Soba noodles, uncooked (~6 oz)
Small chunk of fresh ginger
½ cup of sliced mushrooms
¼ cup of shredded carrots
½ cup of broccoli florets
½ cup of diced celery
½ cup of snap peas
Sliced green onions (for garnish )
3 tablespoons Soy sauce, or coconut aminos for gluten free/vegan option
2 tablespoons Sriracha
1 tsp brown sugar
Boil some water for the soba noodles, and cook according to package. It’ll be about 6-8 minutes, and be sure to rinse in cold water after to prevent sticking.
Prepare all the vegetables by cutting them into small pieces and grate the ginger. You can use whatever vegetables you have on hand for this recipe, and it’ll still be delicious!
Heat up oil, and sauté the ginger and green onions until fragrant, or for about 30 seconds.
Add in the other vegetables, and cook until they start to soften. Add in noodles and toss well.
Add in the soy sauce, sriracha, and brown sugar. Mix well, adjust sauces according to preference, and season with salt and pepper.
