Baked Gnocchi with Roasted Vegetables

A delicious, vegetarian pasta dish that comes together in less than 30 minutes. Roasted garlic, bursting cherry tomatoes, and crispy gnocchi makes for the PERFECT summer meal.


  • 1 package of gnocchi

  • 2-3 garlic cloves

  • ½ pint of cherry tomatoes

  • ¼ of a red onion

  • 1 red bell pepper

  • 5-6 fresh sprigs of thyme

  • Red pepper flakes {optional}

  • Parmesan cheese {optional}


  1. Preheat oven to 450 degrees and drizzle some olive oil on a large sheet pan.

  2. Cut the garlic, red pepper, and red onion into thin slices. Add the cut vegetables and the cherry tomatoes onto the sheet pan, along with the package of uncooked gnocchi.

  3. Toss everything with more olive oil, salt, pepper, and red pepper flakes. Then add in some pieces of thyme.

  4. Bake for about 18-20 minutes, or until everything is roasted and gnocchi is golden brown.

  5. Top with red pepper flakes and parmesan cheese {optional}.
