Homemade Crunch Wraps

With all the hype surrounding  clean eating, it’s safe to say most of us are trying to cook at home more often. But sometimes, you crave Taco Bell, even when you know you shouldn’t eat it. Here is a Homemade Crunch Wrap recipe that will leave you feeling way better than Taco Bell.

Ingredients (this is a vegetarian recipe):

  • 1 can vegetarian refried beans (Old El Paso has a fat free/vegetarian option available at regular grocery stores

  • 1 can black beans (if you shop at Trader Joe’s, try the Cuban style black beans for extra flavor)

  • 2-3 green bell peppers

  • 1 white onion

  • 1 packet large tortillas (bigger than burrito style)

  • 1 packet tostadas (or as an alternative, get taco shells)

  • 1 cup shredded cheese

  • 3-4 tablespoons of salsa

  • Optional: 1 can of whole kernel sweet corn

How to Turn Your House into Taco Bell:

  1. In a pot on low heat, add a little oil to coat the bottom of the pot. Add your refried beans, along with garlic powder, salsa, onion powder, and taco seasoning for extra flavor. A pinch of each seasoning and 3 tablespoons of salsa will do the trick. Heat, while stirring continuously, until they are smooth.

  2. Finely chop peppers and onions.
    Optional: add in some chopped tomatoes and jalapenos.

  3. Place a tortilla on a plate. Add 2-3 tablespoons of the beans to the middle and spread to cover about half the tortilla. The bean layer should be the circumference of the tostada.

  4. Place the tostada on the beans. If you are using a taco shell, break it in half and remove the rounded edges. Place one slightly over the other so it resembles a tostada and fits on top of your bean layer.

  5. Put the black beans, veggies, and cheese on top of your taco shell/tostada.

  6. Melt butter in a large pan on medium heat. Fold the edges of the tortilla so they wrap all the contents together. Place the crunch wrap in the pan, folded-side down. Flip after 2 minutes and cook the other side. Remove from heat when both sides are slightly browned.

Pro Tips:

  • Seasoning: Try Slap Your Mama (available on Amazon)! It is a red pepper, black pepper, garlic, and salt blend all-in-one. It will change your life and is the perfect seasoning for every dish. It can be used as a salt substitute or an added seasoning.

  • Cutting onions: Chewing gum while chopping onions can help prevent you tearing up. Keeping the root on while cutting the onion can prevent tears as well.
