Detox Vegan Green Soup

I am always trying to find recipes that are quick to make in bulk and are loaded with nutrition. This wholesome soup bursts with flavors and packed with fiber, antioxidants and anti-inflammatory qualities. It’s perfect for every season! Here is a breakdown of the benefits of the main ingredients:
Arugula: Powerhouse of vitamins, detoxifies and increases blood flow
Asparagus: Very good source of folate, Vitamin K and antioxidants
Flax-seed: High in fiber
Collagen: Supports healthy hair, nails, and skin
Ingredients: (5 servings)
Organic Arugula 1 packet
Steamed asparagus 1 packet (Trader Joe’s)
Low-fat coconut milk (half can)
Garlic pods 2
Water 3 cups
Jalapeno (1/2 piece) for an extra kick
Ground flax-seed 2 Teaspoons (optional)
Collagen peptides 2 teaspoons (optional)
Put a tablespoon of oil in a deep pan. Sauté the arugula, asparagus, jalapeno (if using) and garlic with salt for 5 minutes on low heat.
Once the greens soften, season with a pinch of turmeric, black pepper (as per your desired spice level), flax-seed powder and collagen. Stir well.
Add the coconut milk and water, and simmer for 2-3 minutes.
Let the mixture cool down a bit and blend it to a creamy texture.
Drizzle some lime juice before serving this bowl of goodness.
